Michael takes pride in using as many local and organic ingredients as possible to create dishes like the Deconstructed Ahi Tuna Napoleon, lightly seared tuna on a crispy wonton with avocado sunamono, micro greens, wasabi mayonnaise, and tamari vinaigrette.
